Shrimp tortillas with piri piri sauce

SHRIMP TORTILLAS WITH PIRI PIRI SAUCE

Portions : 4 - Preparation : 10 minutes - Cooking time : about 15 minutes

Ingredients

  • 24 shrimp 31/40, peeled
  • 60 ml (4 tablespoons) butter
  • 90 ml (6 tablespoons) Piri Piri PICA PICA Original Sauce
  • 15 ml (1 tbsp.) honey
  • 60 ml (4 tbsp.) basil leaves, chopped
  • 60 ml (4 tbsp.) parsley leaves, chopped
  • 4 10'' tortillas
  • 250 ml (1 cup) mango, cubed
  • 250 ml (1 cup) green bell pepper, diced
  • 500 ml (2 cups) cooked rice (basmati or jasmine)
  • 250 ml (1 cup) cheddar or mozzarella cheese, grated
  • 45 ml (3 tbsp.) olive oil
  • salt and pepper to taste

Preparation

  1. Cut shrimp into cubes.
  2. In a hot skillet over high heat, brown shrimp in melted butter for 2 minutes.
  3. Add the PICA PICA sauce, honey and continue cooking for 1 minute. Check seasoning.
  4. Add basil and parsley and mix.
  5. On each tortilla, spread shrimp mixture, mango and green bell pepper cubes, cover with rice and cheese.
  6. Fold the sides of the tortillas over to form squares.
  7. In a hot frying pan, toast each shrimp tortilla in a little oil, 2 to 3 minutes on each side.
  8. Serve with a little sour cream and PICA PICA hot sauce.
