Strawberry verrine with Grand Marnier whipped cream

STRAWBERRY VERRINE WITH GRAND MARNIER WHIPPED CREAM

Portions : 4 - Preparation time : 15 minutes

Ingredients

  • 1 punnet strawberries, hulls removed, cut in 2
  • 30 ml (2 tablespoons) sugar
  • 1 lemon, zest and half for juice
  • 500 ml (2 cups) 35% cream
  • 60 ml (4 tablespoons) powdered sugar
  • 3 ml (1/2 tsp.) natural vanilla extract
  • 60 ml (4 tablespoons) Grand Marnier or Cointreau
  • 8 graham crackers, crushed into large pieces

Preparation

  1. In a bowl, combine the strawberries, sugar and juice of ½ lemon. Refrigerate for 30 to 60 minutes.
  2. In a bowl, whip cream until smooth. Add powdered sugar, lemon zest, vanilla and Grand Marnier. Continue to whip more slowly, until you obtain a slightly firmer texture (don't overwhip to avoid slicing the cream).
  3. In each bowl, place a few strawberries, then a few cookie slivers, cover with some whipped cream, add more strawberries, more cookie slivers and finish with the whipped cream and strawberry juice.
