VEGETARIAN WRAP WITH GRILLED VEGETABLES AND HUMUS

Ingredients
- 1 red bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- ½ eggplant, thinly sliced
- 1 onion, thinly sliced
- 2 garlic cloves, chopped
- 1 sprig thyme, leaves removed
- 75 ml (4 tbsp.) olive oil
- 60 ml (4 tbsp.) white balsamic vinegar
- 8 10" wrap patties
- 120 ml (4 tbsp.) humus
- 250 ml (1 cup) chopped lettuce
- salt and freshly ground pepper to taste
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine bell bell pepper, zucchini, eggplant, onion, garlic, thyme, olive oil, vinegar, salt and pepper.
- Place all the vegetables on the BBQ grill and grill for 3-4 minutes.
- Cut peppers into thin slices.
- On each wrap, spread the humus, then arrange the grilled vegetables, add the lettuce and close.
