Vegetarian wrap with grilled vegetables and humus

VEGETARIAN WRAP WITH GRILLED VEGETABLES AND HUMUS

Portions : 4 - Preparation : 5 minutes - Cooking : 5 minutes

Ingredients

  • 1 red bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • ½ eggplant, thinly sliced
  • 1 onion, thinly sliced
  • 2 garlic cloves, chopped
  • 1 sprig thyme, leaves removed
  • 75 ml (4 tbsp.) olive oil
  • 60 ml (4 tbsp.) white balsamic vinegar
  • 8 10" wrap patties
  • 120 ml (4 tbsp.) humus
  • 250 ml (1 cup) chopped lettuce
  • salt and freshly ground pepper to taste

Preparation

  1. Preheat the BBQ to maximum.
  2. In a bowl, combine bell bell pepper, zucchini, eggplant, onion, garlic, thyme, olive oil, vinegar, salt and pepper.
  3. Place all the vegetables on the BBQ grill and grill for 3-4 minutes.
  4. Cut peppers into thin slices.
  5. On each wrap, spread the humus, then arrange the grilled vegetables, add the lettuce and close.
